2 Pound Tomatoes
1 Jalapeno Pepper
Move an oven rack to the highest position (I kept the top rack at 3rd row).
My custom Broil is set at 500 degrees F. Preheat the broiler.
Wash the tomatoes and jalapenos.
Broil jalapeno for 5 minutes in baking pan. Arrange tomatoes in the same baking pan.
Broil for 16 minutes, turn them after 8 minutes.
Immediately place the tomatoes and jalapeno in a large bowl, cover and let it stand for 20 minutes.
Peel off and discard the charred skins. Discard charred skins.
Discard stems and seeds from jalapeno.
Cut tomatoes into 4 pieces. Set tomatoes and jalapenos aside.
1/2 Cup Fresh Cilantro Leaves
2 Green Onions, Chopped into 2 Pieces
4 Garlic Cloves, Peeled
1 Chipotle Pepper on Adobo Sauce
Place cilantro, green onions and garlic in food processor, process until blended.
Add chipotle pepper, tomatoes and jalapeno, pulse until blended.
2 Tbsp Lime Juice (Juice from 1 Lime)
1 Tbsp Olive Oil
1/2 Tsp Salt
Add lime juice, olive oil, salt and pulse for few more times. Cover and refrigerate atleast for 1 hour.
Taste Note: Tastes Good. hmm... can be better though.
