2 Cups Quinoa
4 Cups Water
1/2 Tbsp Salt
Wash Quinoa, add water and allow it to boil. Once its starts boiling, reduce the heat to medium, add Salt and allow it to cook for 18 minutes. Allow it to cool.
2 Tbsp Oil
1" Cinnamon Stick
2 Tsp Cumin Seeds
1 Big Onion, Chopped
2 Tomatoes, Chopped
1 Carrot, Cubed
20 Beans, Chopped into 2" Pieces
1 Potato, Cubed
2 Green Chilies, Chopped Lengthwise
1/4 Cup Mint Leaves
1 Red Bell Pepper, Cubed
1 Orange Bell Pepper, Cubed
1 Yellow Bell Pepper, Cubed
3 Sambar Powder or ( 1/ Tsp Red Chili Powder and 1/ Tsp Coriander Powder)
2 Tsp Salt
3/4 Cups Water
Heat oil in pan, add cinnamon and cumin seeds.
Add onions and saute for 5 minutes in medium flame.
Add tomatoes, mix and close the pan and cook for 7 minutes in medium flame.
Add potato, carrot, beans, green chilies and mint and fry for 3 minutes in medium flame.
Add bell peppers, sambar powder, salt and fry for 5 minutes.
Add water, close the pan and cook in medium flame for 20 minutes.
Mix with cooked quinoa.
