Drumstick Eggplant Sambar

1/2 Cup Toor Dal
3 Cup Water
1/4 Tsp Turmeric Powder

Wash and cook dal with turmeric powder and oil in pressure cooker for 6 whistles. Let it cool and then mash the dal.

Tamarind, Big Gooseberry Size
1 Cup Water

Heat water add tamarind and soak for sometime and extract tamarind water.


1 Tbsp Coconut Oil
1/2 Tsp Mustard Seeds
1/4 Tsp Fenugreek Seeds
1/4 Tsp asafaetida 
2 Red Chilies, Whole

10 Pear Onion, Chopped
2 Green Chilies, Chopped Lengthwise into 2 Pieces
10 Curry Leaves


2 Tomato, Chopped into 8 Pieces


3 Drumstick


4 Eggplant
1/4 Tsp Salt
1/4 Tsp Turmeric Powder

 

2 Cups Water

1 and 1/2 Tsp Sambar Powder
1 Tsp Salt
2 Garlic, Chopped

Cilantro, to Garnish

Heat oil in a pan, add mustard seeds, once it starts popping, add fenugreek seeds, red chilies, asafoetida and fry for few seconds.

Add onions, green chilies and fry until onion turns light brown. Add curry leaves and fry for few seconds.

Add tomato and saute for 2 minutes.

Add drumstick and saute for a minute.

Add eggplant, turmeric powder, salt and fry for 5 minutes.

Add cooked toor dal and water and cook for 5 minutes in high.

Add sambar powder, salt, garlic and 1 cup tamarind water and let it boil for 5 minutes in high.

Turn the stove to medium and cook for another 10 minutes.

Garnish with cilantro.
