Sprouted Mung Bean Quinoa Pulav

1 Cup Whole Green Mung Beans

Wash the mung beans 4 times and overnight soak the mung beans.

Yields: 2 and 3/4 Cups Mung Beans (After Soaked)


The next day, put the mung beans in sprout maker and it will sprout in 2 to 3 days. The following picture is after 2 days. But i left it for 3 days.


Yields: 4 and 1/2 Cups of Mung Bean Sprouts

2 Cups Quinoa
4 Cups Water
1/2 Tbsp Salt

Wash Quinoa, add water and allow it to boil. Once its starts boiling, reduce the heat to medium, add Salt and allow it to cook for 18 minutes. Allow it to cool.


2 Tbsp Oil
1 Bay Leaf
1/2 Cinnamon Stick
2 Cloves
1 Star Anise



1 Big Onion, Chopped


2 Tsp Garlic, Grated
2 Tsp Ginger, Grated


3 Tomatoes, Chopped


1/4 Cup Mint Leaves, Chopped
1/4 Cup Cilantro, Chopped

1/4 Tsp Turmeric Powder
1 and 3/4 Tsp Salt
1 and 1/2 Tbsp Coriander Powder
2 and 1/2 Tsp Chili Powder
1/2 Tsp Garam Masala


3 Cups Sprouted Mung Beans


1 Cup Water

Heat oil in a pan, add bay leaf, cinnamon, cloves and anise and fry for a minute.

Add onions and fry for 5 minutes in medium flame.

Add grated ginger and garlic and fry for a minute.

Add tomatoes and fry till tomatoes become soft.

Add cilantro, mint, coriander powder, chili powder, turmeric powder, garam masala and salt and fry for few minutes.

Add sprouted beans and water, stir to combine and close the pan and cook for 15 minutes on medium flame. This is to cook the sprouted beans slightly so it does not taste raw in the pulav. Switch off the stove.

Add the cooked quinoa little by little and mix well.


Taste Note: Tastes Good
Yields: 9 Cups
