Baked Sweet Potato



3 Sweet Potatoes

Heat oven to 400 F. Wash and prick potatoes all over with a fork and arrange on a baking sheet. Bake potatoes until tender, about 45 minutes. I kept then in 4th rack and let cool.


1/2 Cup Old-Fashioned Rolled Oats
1/4 Cup Raw Almonds, Chopped
3 Tbsp Maple Syrup
1 Tbsp Olive Oil
1/8 Tsp Coarse Salt

Combine oats, almonds, maple syrup, oil and salt.

Transfer the mixture to a baking sheet, spreading out flat.


Bake crumble, stirring occasionally, until golden brown, about 8 minutes.


Split sweet potato with knife and top with crumble.


Taste Note: Tastes Good.
