2 Cups Quinoa
4 Cups Water
1/2 Tbsp Salt
1/2 Tsp turmeric powder
4 Tbsp Ground Flax Seed Meal
Wash
Quinoa, add Water and allow it to boil. Once its starts boiling, reduce
the heat to medium, add Salt, Turmeric Powder and Ground Flax Seed Meal and allow it to
cook for 15 minutes. Allow it to cool.
1 Tsp Olive Oil
1/4 Tsp Mustard Seeds
2 Tsp Urad Dal
2 Tsp Yellow Split Peas
2 Red Chili, don't chop, just add
1/4 Cup Cashew nuts
1/2 Bag Pearl Onions, Chopped lengthwise
5 Green Chilies, Chopped lengthwise
11 Curry Leaves
Pour Olive Oil in a pan, add Mustard Seeds, when it starts sputtering,
add Urad Dal, Yellow Split Peas and Cashew Nuts. Saute till the color of
the dal changes.
Add Chopped Onions, Green Chilies, Curry Leaves and saute till the color of the onion changes.
1 and 1/4 Tsp Salt21 Squeezes Asafoetida
Add Salt and Asafoetida and mix well. Add Quinoa and mix well.
Lemon Juice from 2 Meyer Lemons
Remove the seeds from Lemon and squeeze the lemon juice on to the Quinoa. Mix well. Switch off the stove.
Chopped Cilantro, to Garnish
1/4 Cup Dry Roasted and Unsalted Peanuts
1 Tsp Gingili Oil
Add Chopped Cilantro and Peanuts and mix well. Add Gingili Oil and mix well.
Taste Note: Tastes Awesome.
Yields: 9 Cups
