Surakai Thatta Pairu Kulambu (Opo Cow Pea Kulambu)

2 Cups Thatta Pairu

Clean the thatta pairu. Remove the sticks, stones and whatever else it has. Wash it under running water. Overnight soak the thatta pairu in water.

1 Tsp Salt
6 Cups Water


Cook the thatta pairu with salt and water for 5 whistles.


1 X-Small Opo Squash, Peeled and Chopped into Small Pieces ( 3 1/2 Cups Chopped)


When pressure is released, add chopped opo squash and cook for 10 more minutes.


1 Lemon Size Tamarind
2 Cups Water


Heat tamarind and water for 5 minutes, let it cool and make tamarind water.

Masala



1/2 Cup Onion
1 and 1/2 Tsp Coriander Seeds
1/2 Tsp Cumin Seeds
3 Red Chilies
3 Garlic
1/4 Cup Coconut Powder
1/2 Tsp Chicken Masala ( I used Peshawari Mutton Curry Masala )
1/2 Cup Water

Grind onion, coriander seeds, cumin seeds, red chilies, garlic, coconut powder, chicken masala powder, water in magic bullet to a smooth paste.


1 Tbsp Oil
1 Cup Onion, Chopped

1 Sprig Curry Leaves
2 Tomatoes, Chopped (1 Cup)
3 Red Chilies, Broken into 2 Pieces
1/2 Tsp Salt

Heat oil in a pan, add onion and fry for 5 minutes in medium flame.

Add curry leaves, tomatoes, red chilies, salt, fry till the tomatoes become mushy.

Add ground paste and allow it to cook for 5 more minutes in medium flame.

1/2 Tsp Turmeric Powder
1 Tsp Salt

Add the cooked beans and opo, turmeric powder, salt to this, cook for 2 more minutes.

Add the tamarind water and cook for 10 more minutes.
