Mixed Vegetable Pinenut Chutney




2 Tsp Oil
1/2 Tsp Mustard Seeds
1 Tbsp Urad Dal
1 Red Chilies

1 and 1/4 Cup Onion, Chopped
1 Green Chilies, Chopped into lengthwise pieces
1 Tsp Ginger, Grated

1/2 Cup Carrot, Chopped
1/2 Cup Green Bell Pepper, Chopped
1/2 Cup Zucchini, Chopped
1/2 Tsp Salt
1/4 Tsp Turmeric Powder

1/4 Cup Green Tomato Chopped

1/2 Tsp Blackpepper Corns
1/2 Cup Pine nuts
Little but Tamarind


Heat Oil in a Pan, add Mustard Seeds, when it splutters, add Urad Dal and Red Chilies.

Add Onion, Green Chilies, fry for 4 minutes.  Add Ginger, fry for a minute.

Add Carrot, Bell Pepper, Zucchini, Salt, turmeric powder and fry for 5 minutes. Add 1/2 cup water, mix well and cook for 5 minutes.

Add Green Tomatoes and fry for 5 minutes.

Allow it to cool.

Add Pine Nuts, Tamarind, black pepper corns and grind.
