White Pumpkin Sambar

1 and 1/2 Cup Toor Dal
1/2 Tsp Salt
1/4 Tsp Turmeric Powder

Cook toor dal with salt and turmeric powder for 6 whistles.


Small Lime Size Tamarind
2 Cups Water


Boil tamarind in water for 5 minutes. Allow it to cool and make tamarind water out of it.


1 Tbsp Oil
1/2 Tsp Mustard Seeds

1/4 Tsp Fenugreek Seeds
1/8 Tsp Asafoetida
2 Red Chilies, Broken into 2 Pieces

9 Pearl Onions, Chopped
2 Green Chili


2 Tomatoes


4 and 1/2 Cup Pumpkin, Chopped


Heat oil in a pan, add mustard seeds, when it starts to splutter, add fenugreek seeds, asafoetida, red chilies and saute for few seconds, add onion, green chili and saute for 3 minutes in medium flame.

Add tomatoes and saute for 2 more minutes in high flame.

Add pumpkin pieces and saute for 3 more minutes in medium flame.

1/2 Tsp Turmeric Powder
1 Tbsp Sambar Powder
2 and 1/4 Tsp Salt
1 Cup Water

Add turmeric powder, sambar powder, salt, mix well. Add water and allow it to cook for 5 minutes in high flame.

1 Cup Water

Add cooked toor dal, tamarind water, water and allow it to boil for 10 more minutes in medium flame. Switch off the stove.

Cilantro Leaves, to Garnish

Garnish the sambar with cilantro leaves.
