Mushroom Kulambu

Masala


5 Pearl Onions (1/2 Cup Chopped)
1 Tsp Ginger, Chopped
5 Garlic Cloves
1 Green Chili (Do not use 2, it was way too spicy)

1 and 3/4 Tsp Red Chili Powder
1 and 1/2 Tbsp Coriander Powder
1/4 Tsp Turmeric Powder

1/2 Cup Water

Grind all the above with water and make masala paste.


1 Tbsp Oil
1" Cinnamon
2 Cloves
1 Cardamom
1/2 Tsp Fennel Seeds


1/4 Cup Mint Leaves
1 Sprig Curry Leaves


1/2 Cup Onion, Chopped
5 Garlic, Finely Chopped


1/2 Cup Tomato, Chopped (1 Tomato)


24 oz Costco Mushroom, Chopped


1 and 1/2 Tsp Salt


Heat oil in a pan, add cinnamon, cloves, cardamom, fennel seeds, fry for 30 seconds, add mint leaves and curry leaves and fry for 30 more seconds.

Add onion and fry for 1 minute in high.

Add garlic and fry for 1 more minute in high.

Add tomato and fry for 1 more minute in high.

Add ground masala and fry for 5 more minutes in medium flame.

Add chopped mushrooms, salt and mix well with masala. Close the pan and cook for 10 minutes in medium flame. Do not add water.


1/4 Cup Coconut Powder
1/4 Cup Cashew Nuts
1/4 Tsp Fennel Seeds
1/2 Cup Water

Add coconut powder, cashew nuts, fennel seeds with water and make smooth paste.


1/4 Tsp Turmeric Powder
1 and 1/2 Cup Water

Add the ground nut mixture, turmeric powder, water to the kulambu, mix well, close the pan and cook for 10 more minutes in medium flame.

1 Tbsp Coriander Leaves, Chopped

Garnish with coriander leaves.
