Zucchini Cacao Walnut Bread


1 and 3/4 Cup Brown Rice Flour
2 Tsp Baking Powder
1/2 Tsp Baking Soda
1/4 Tsp Salt
1/3 Cup Coconut Sugar


Combine flour, baking powder, baking soda, salt and coconut sugar.

1/2 Cup Coconut Oil, MELT the coconut oil


3/4 Cup Apple Sauce


Mix coconut oil and apple sauce well in a bowl.
Mix wet and dry ingredients together.


1 Cup Grated Zucchini (1 Medium Zucchini)
1/3 Cup Vegan Cacao Nibs
1/3 Cup Walnut, Finely Chopped


Fold in grated zucchini, cacao nibs and walnuts.

Preheat the oven to 350 degrees F

Grease 9 x 5" Loaf Pan well.


 Bake for 55 minutes, until the loaf is golden on top and a toothpick inserted comes out clean. Allow it to cool and keep it in the Refrigerator before slicing (as per sondibruner), probably this will help the slices to hold together.

Taste Note: Tastes Really Good. But the bread was not holding together, it was breaking apart.
