Pasta with Vegan Tomato Sauce



1 Tbsp Coconut Oil
1/2 Big Onion, Small, Chopped (next time add 1 onion and change the measurement after tasting)
4 Garlic Gloves, Chopped

1 Green Bell Pepper, Small, Chopped

1 lb Dry Farm Tomatoes, Chopped
1 Tsp Salt
1 Tsp Black Pepper
1 Tsp Dried Basil (or 1 Tbsp Fresh Basil Chopped, but since i love basil, i added 1/4 cup of fresh basil)
1/2 Tsp Dried Oregano (next time add 3/4 Tsp of Oregano and change the measurement after tasting)

Heat Oil in pan over Medium heat, add Onions and Garlic and saute for 5 minutes.

Add Bell Pepper and saute for 5 more minutes.

Add Tomatoes, Salt, Pepper, Basil and Oregano. Mix well.

Let it simmer for 20 minutes in Medium Low, stirring occasionally.

Turn down the heat, if it starts to stick.


Allow it to cool and blend the sauce in the blender.

8 oz Penne Pasta (Gluten Free Ancient Grain, Made from Quinoa, Amaranth & Brown Rice)
1 Tbsp Salt

Boil 3 quarts of water to a rolling boil. Add Salt.

Cook pasta as per cooking direction on the cover (it asks to cook for 6 to 8 minutes, but i cooked for 13 minutes) and add it to the sauce.



Taste Note: Tastes Awesome

Yields: 4 Cups
